Lobster and Avocado Salad Sandwiches

1/2 pound cooked lobster meat (approximately two 1 1/2-pound lobsters), cut into 1/8-inch dice
1 small avocado, peeled, cut into 1/8-inch dice
2 tablespoons olive oil
2 tablespoons lime juice
2 teaspoons peeled and finely chopped fresh ginger
1/4 teaspoon salt
8 slices white bread or 4 deli buns
Recipe
Combine lobster, avocado, oil, lime juice and ginger in a medium-size bowl. Stir in salt. Divide lobster salad among 4 pieces of bread. Top with remaining bread. Makes 4 servings.
