Salmon Salad Sandwich
8 ounces of salmon, poached
2 tablespoons mayonnaise
1 tablespoon red onion, chopped
1 tablespoon celery, chopped
½ tablespoon fresh dill, chopped
2 tablespoons cucumber, peeled, seeded and chopped
1 tablespoon black olives, chopped
salt and pepper to taste
sourdough or wheat bread, toasted
lettuce and sliced tomato as desired.
Recipe
Combine all of the above ingredients except the salmon. Flake the salmon into the mixture but don’t over-mix!
