CARIBBEAN SAUCE
Makes a scant ½ cup
Start with your favorite bottled Thai-style sweet-hot chili sauce, available in the Asian section of better supermarkets, and give it a Caribbean twist with jerk seasoning.
SHOPPING/PANTRY/REFRIGERATOR LIST
1 teaspoon Wondra (quick-dissolving) flour
1/3 cup sweet chili sauce
½ teaspoon Jamaican jerk seasoning (available in the supermarket)
PREPARATION
1. In a small mixing bowl, whisk the flour with 1 teaspoon cold water, breaking up any clumps. Whisk in the chili sauce, followed by the seasoning blend and mix well.
2. Pour the mixture into a small pot and cook over high heat, stirring constantly until thickened, 3 to 4 minutes. Transfer to a bowl and cool completely before using.
