Fresh Applesauce
1-3/4 lbs. Jonathan or Rome apples, cored, peeled and cut into small wedges
1/2 cup sugar
1/2 tsp. cinnamon
1/2 cup water
Recipe
Combine all ingredients in a heavy non-reactive saucepan over medium high heat.
Bring to a boil. Immediately reduce heat to low. Simmer 5-7 minutes, stirring occasionally,
until apples are very soft. Transfer apple mixture to a food processor or blender
and purée.
