    Lemon-Brown Sugar Barbecue Sauce

    2 C. ketchup
    1/2 C. brown sugar
    1 tsp. grated lemon zest
    6 T. fresh lemon juice, or more to taste
    2 T. molasses
    1 T. Worcestershire sauce
    1 1/2 tsp. liquid smoke
    2 tsp. dry mustard (like Coleman's)
    1 tsp. onion powder
    1/2 tsp. freshly ground black pepper

    Recipe



    Combine ketchup, brown sugar, lemon zest and juice, molasses,
    Worcestershire sauce, liquid smoke, mustard, onion powder and pepper in a non-reactive saucepan and whisk to mix. Gradually bring sauce to a simmer over medium heat and let simmer until thick and flavorful, 8-10 minutes. Taste for seasoning, adding more lemon juice if necessary.

    Transfer sauce to a bowl or clean jars and let cool to room temperature. Refrigerate sauce, covered, until serving time; let it return to room temperature before using. The sauce can be refrigerated for several weeks.

    Makes about 3 cups.
