AUTUMN EVENING SUPPER
1 1/2 qt. chopped cooked potatoes
7 chopped American cheese slices
1/4 c. green onions, diced
1/4 c. Italian salad dressing
2 tbsp. chopped pimentos (from a jar)
1 lb. smoked sausage, cut into 6 equal portions
3 slices American cheese
Combine potatoes, 7 slices cheese, onions, salad dressing, and pimentos. Mix lightly. Spoon into baking dish and top with sausage. Bake at 350 degrees for 30 minutes uncovered until thoroughly heated. Top with remaining cheese that is cut diagonally in half. Continue baking just until cheese begins to melt. Serve hot. Makes 6 servings.
