    Cornbread Dressing

    2 large onions
    1 hen
    4 ribs of celery, chopped
    2 slices of bread
    1 large pan cornbread
    3 green onions, chopped
    1 stick butter
    1 Tablespoon poultry seasoning
    salt & pepper to taste
    5 eggs, beaten

    Recipe



    Quarter one onion and boil with chicken & one rib of celery. Continue to boil until meat is easily removed from the bone. Remove meat and reserve broth. Chop remaining onion and combine with crumbled breads, green onions and remaining celery in a large mixing bowl.

    Heat 3-4 cups of broth in a saucepan and add butter and bring to a boil. Pour broth over breads and mix well. Bread mixture should be soupy. Add more broth if it's too dry. Add seasonings to taste and eggs. Place reserved meat in an oiled 13 x 9 in. pan and pour dressing mix on top. Bake at 350° for one hour or until golden brown.
