Fingerling potato skins with Gorgonzola crème fraiche, hickory smoked bacon and chives

Yields: 4 servings
Ingredients:
4 lbs. Fingerling potatoes
8oz-1 lb. hickory smoked bacon
1 cup sour cream
¼ cup roasted garlic
¼ cup demi-glace (optional)
¼ cup heavy cream
½ - 1 cup Gorgonzola crumbles
¼ cup fresh chive or green onions
Olive oil as needed
1 pinch smoked paprika
Directions:
Salt and pepper as needed. Roast for fifteen minutes. In large mixing bowl, whisk sour cream, whipping cream, demi, Gorgonzola and salt pepper to taste then chill. On a baking dish or pan lay out your potatoes, then crème fraiche- cheese mixture, more cheese, bacon and broil until just browned. To finish top with fresh chives and smoked paprika.
