Recipe Introduction
This is one of the few dishes that cooks up good when using beer
in the recipe. please do not use a
porter, stout or other dark beer-the flavor is too strong - Bud,
Miller, or Lone Star will work fine.
And if you really want to enjoy these beans right,....get yourself a quart of Mad Dog and sip on it while these beans are cooking, never mind tomorrow, it will take care of itself
List of Ingredients
Frijoles Borrachos-drunk beans
1 lb pinto beans-soak overnight in water
3 strips-thick slice bacon-chopped
2 tbl lard
2 jalapeno chili-chopped
1 large onion-chopped
3 cloves garlic-minced
1 can-12 oz beer
water
1 can-8 oz tomato sauce
2 tsp Mexican oregano
1/2 tsp cumin powder
Recipe
Drain beans-place in bean pot-add beer and the first group of
ingredients-add enough water to cover
beans-simmer till beans are almost tender-keep water just above
beans-now add second group of
ingredients-simmer 30 min longer-you might want to leave lid off
bean pot-so this thickens up some-
I usually dip a cup of beans out toward the end of cooking time
and mash them and return to pot.
