Grilled Watermelon Salad with Cajun Grilled Shrimp

1 seedless watermelon
10oz mixed organic baby greens
1 btl poppy seed dressing
½ red onion – shaved
1 red bell pepper – julienne
5-6 fresh basil leaves – chiffonade
5-6 fresh mint leaves – chiffonade
6oz crumbled feta cheese
8 oz black mission figs – quartered (optional)
1 ½ lb fresh jumbo shrimp – pealed, devein, tail-on (skewered 4-6 shrimp per skewer)
5-6TB extra virgin olive oil
Cajun seasoning / fresh black pepper/ kosher salt – available
Procedure
1. Cut the watermelon into large round slices – 5-6 pieces – leave rind in tact
2. brush the watermelon with olive oil and season with salt & pepper
3. place watermelon on SUPER HOT clean grill for about 1 ½ min per side
4. set aside
5. brush skewered shrimp with olive oil and season with Cajun seasoning
6. Grill until done about 2-3 min per side – set-aside
7. in a lg bowl toss the remaining salad ingredients with enough of the dressings to just coat the baby greens – set aside
8. remove the center part of each slice of watermelon leaving the circle of rind
9. dice the watermelon and add to the salad mixture
10. use the rind as a base/ holder for the salad on the plate
11. add the salad mixture and top with the grilled shrimp
12. makes 4-6 salads
