    Maple Baked Beans

    Maple Baked Beans

    1 lb. navy or pea beans (or whatever kind of dry beans that you like)
    1/2 lb. salt pork
    2 tsp salt
    1/2 tsp dry mustard
    2 Tbsp. prepared mustard
    1 medium size onion, peeled
    1-1.5 cups real Maple Syrup (depending on sweetness desired)


    Recipe

    Wash and pick over dry beans, cover with cold water and soak over
    night, Next morning rinse beans and parboil in fresh water until
    skins wrinkle. Drain off bean water and save, set aside. Place a
    whole onion (or you can chopped it into quarters) in the bottom of
    your bean pot. Add the soaked beans, maple syrup and mustards.

    Score salt pork and place on top of beans and add enough bean water to cover. Cook in a slow oven of 325 degrees F. for about 8 hours.

    Check periodically and add more bean water as needed. For last hour
    cook uncovered so that pork will brown.
