Naughty Potatoes

Great for holidays because you can prepare them ahead of time and they are just as good, if not better!
3 lbs. peeled russet potatoes, cut in chunks, boiled until done, strained
1 (8 oz.) pkg. cream cheese
1 (8 oz.) sour cream
1 stick of butter
Salt & Pepper to taste
Food processor is preferable to get smooth consistency (or mix well w/ mixer) to process half of all ingredients at a time and put in a buttered baking dish; repeat. Top with more butter.
Heat through in oven and serve, or refrigerate up to 3 days to use later. Bring to room temp and reheat in 300-350 degree oven till hot.
