Parsnip Mashed Potatoes
3 lb russet potatoes
1 lb parsnips
4 tbsp butter
1/2 tsp black pepper
3/4 cup milk
Recipe
Scrub potatoes and parsnips and cut into smaller pieces.
Place in a pot, cover with water, and bring to a boil. Simmer until the potatoes are soft. Drain.
Mash potatoes and parsnips with remaining ingredients. Adjust seasoning to taste.
Serves 8
