Rice, nut, fruit & Bourbon Stuffing

½ cup dried currants
20 dried apricot halves
1 cup sultana raisins
¼ cup Bourbon
1 apple, peeled and diced
2 onions, peeled and diced
3 celery stalks, diced
½ cup wild rice
1 cup long grain white or brown rice
1 ½ cups chicken stock
¾ cup orange juice
½ cup cashews
1/3 cup pine nuts
¾ cup whole fresh cranberries
2 tablespoons olive oil
1 teaspoon dried thyme
Salt & freshly ground pepper
Recipe
Soak the currants, apricots and raisins in the bourbon for 1 hour.
Saute the apple, onion and celery in the olive oil.
Cook the wild rice in the orange juice until tender.
Cook the long grain rice in the chicken stock until tender.
Combine all the ingredients together and season with salt and pepper.
Let the stuffing cool completely before stuffing the turkey
