SUMMER VEGGIE SIDE DISH
2 tbls olive oil
3 medium tomatoes, cut into small chunks
2 cloves garlic, minced
1 tbls chopped fresh basil
½ tsp dried thyme
½ tsp salt
¼ tsp black pepper
3 medium yellow squash, cut into 1 inch chunks
2 medium zucchini, cut into 1 inch chunks
Recipe
Heat the oil in a large skillet over medium heat.
Add the tomatoes, garlic, basil, thyme, salt and pepper. cover and cook for approx 5 minutes, stirring occasionally.
Add the yellow squash and zucchini, cover and cook for an additional 5 minutes.
Uncover and cook for approx 3-5 minutes or until the vegetables are just tender and the sauce has thickened slightly.
