Smashed Potatoes

Yield: 6 Servings
4 To 6 russet or Yukon gold
Potatoes, well scrubbed with
-skins on
1/2 c Skim milk
1/2 c No-fat sour cream
2 T Low fat margarine
2 T Chives
2 cl Garlic, peeled
Recipe
Wash thoroughly 4-6 potatoes, but do not peel. Cut into 1-1/2 to
2-inch cubes and place in large pan of cold water. Place the peeled
garlic in the same pan. Put over high heat and bring to a boil, then turn
heat down to medium and maintain a rolling boil. Cook until potatoes are
tender.
Drain potatoes. Add milk and margarine and mix at low speed on mixer
until just blended (do not overblend). Add sour cream and chives and
mix with spoon until blended.
