Snow Pea Linguini
12 ounces snow peas, tip and stem ends removed
1/4 cup chicken stock
2 tablespoons unsalted butter
Fine sea salt
3 tablespoons freshly grated Parmesan
Recipe
1. Stacking a couple of snow peas on top of each other, cut peas lengthwise into very fine strips. Repeat process until all the peas are cut; you should have about 4 cups.
2. Place snow peas in a medium saucepan with chicken stock, butter, and a pinch of salt. Cover and place over medium heat; cook until peas are tender and glazed, 3 to 4 minutes. Sprinkle cheese over peas before serving.
Serves 4 as a side dish
