6 baking potatoes (2 lbs.), baked
2 Tbs. oil
15 oz. jar Cheese Whiz cheese dip
1/4 cup Oscar Mayer real bacon bits
1/2 cup sour cream
2 green onions, sliced
Heat oven to 375. Cut potatoes lengthwise in half; scoop out centers,
leaving 1/4-inch thick shells. (Reserve centers for another use.)
Cut shells crosswise in half. Place shells, skin-sides down, on
baking sheet; brush insides of shells lightly with oil. Bake 15
minutes or until golden brown. Microwave Cheez Whiz in microwaveable
bowl on high 3 minutes, stirring after 1-1/2 minutes. Pour into
potato shells; top with remaining ingredients.
Make Ahead:
Having a party? Bake the potatoes the day before to save time on the
day of the party. Store, covered, in the refrigerator until ready to
use; continue as directed.
Variation:
Substitute 1/2 lb. (8 oz.) Velveeta cheese for the Cheez Whiz and 4
slices Oscar Mayer bacon, cooked and crumbled, for the bacon bits.
