BLACK BEAN AND SAUSAGE STEW

3 cans (15 oz each) black beans, drained and rinsed
1 1/2 cups chopped onion
1 1/2 cups fat-free reduced-sodium chicken broth
1 cup sliced celery
1 cup chopped red bell pepper
4 cloves garlic, minced
1 1/2 tsps dried oregano
3/4 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp ground red pepper
6 oz. cooked turkey sausage, thinly sliced
Recipe
1. Combine all ingredients in slow cooker, except
sausage. Cover and cook on LOW 6 to 8 hours.
2. Remove about 1 1/2 cups bean mixture from
slow cooker to blender or food processor; puree
bean mixture. Return to slow cooker. Stir in sliced
sausage. Cover and cook on LOW an additional
10 to 15 minutes. Makes 6 servings.
