    Soup is good food, but stew can be even better when you're in the market for a hearty beef dish. A great way to warm up from a cold day, it's loaded with vegetables, potatoes and plenty of meat.
    Ingredients
    2 lb. beef roast
    3-5 tbsp. butter
    Fresh potatoes cubed or whole
    Baby carrots, whole
    Onions, cut into bite size pieces
    1-2 tsp. butter
    2 cups hot water
    Dry onion soup mix

    Methods/steps
    If your crock-pot has a high browning setting, brown all sides of your meat, in 3-5 tbsp. butter. You can also use a large sauté pan on your stove top, being sure to scrape the pans dripping into the crock pot for best flavoring. When meat is golden to deep brown on all sides, add hot tap water to half way up your crock-pot. Leave crock-pot on high. In a sauté pan on your stovetop, add 1-2 tsp. of butter with onions and sauté until they're a deep golden brown, stirring often so they don’t burn. Pour the sautéed onions in the crock-pot and place pan back on the stovetop. Carefully pour hot tap water in the pan, stirring to get all the sticky onion leftovers off the bottom and sides, and then pour this watery mixture into your crock-pot. Add hot tap water to cover meat. Add your favorite seasonings. When making this meal, remember the meat will take longer to cook, add potatoes and carrots about half way through the cooking stage, so they don't get mushy. You may need to add hot tap water, to cover over the vegetables. This yummy dish takes a while if you want your meat to be tender, but it’s worth the wait.
