Beef Taco Soup
1 1/2 pounds ground beef
1/2 cup chopped onion
1 (28-ounce) can diced tomato
1 (16-ounce) can kidney beans
1 (15 1/4-ounce) can whole kernel corn
1 cup tomato sauce
1 cup water
1 envelope taco seasoning mix
Salt and black pepper to taste

Suggested toppings: shredded cheddar cheese, sour cream, sliced green onions or chopped fresh cilantro, tortilla chips
1. Cook ground beef and onion in a Dutch oven over medium-high heat, stirring frequently, until ground beef is browned and crumbly, about 8 minutes; drain off drippings.
2. Stir in undrained tomatoes, undrained beans and undrained corn. Add tomato sauce, water, seasoning mix, salt and black pepper and stir.
3. Simmer, stirring occasionally, for 15 minutes. Ladle into soup bowls. Serve with the toppings of your choice.
