New Year's Dish by Sonja Dowdle/Delish's Desserts
Blackeye Pea Stew with Conecuh Sausage
1/16 oz bag conecuh sausage
1/4 cup oil
1 small onion chopped
1 15oz can corn
1 15 oz. can diced tomatoes
2 15 oz. can black-eyed peas
1 15 oz. can tomato sauce
1 tablespoon cajun seasoning
1 tablespoon garlic powder
Hot sauce to taste
1/2 cup beef broth
Brown sausage and onion in oil. Add all other ingredients simmer for one hour. Or slow cook in crock pot . Serve over rice. Serves 4
