Makes 8 servings
2 teaspoons vegetable oil
1 medium onion, chopped
1 (10-ounce) can barbecued beef
1 (10-ounce) can barbecued pork
1 (6-ounce) can boneless chicken
1 (15-ounce) can lima beans
2 (15-ounce) cans creamed corn
2 (15-ounce) cans diced tomatoes
1/2 cup barbecue sauce
Recipe
In a Dutch oven or other large heavy pot, heat the oil. Add the onions and saute until translucent. Add barbecued beef, barbecued pork, chicken, lima beans, corn, tomatoes and barbecue sauce and bring to a simmer. Cook on low for 10 to 15 minutes, or until heated through.
