Butternut Squash Bisque

* 1 Tbsp. Olive oil
* ½ cup Yellow onion peeled & diced
* 4 cups Butternut Squash
* (pre roasted at 450 degrees for 20 mins)
* 2 ½ cup Chicken broth
* 1 tsp Fresh ginger
* 1 cup Heavy Cream
* pinch Black pepper
Add the oil to a hot soup pot
Add the squash, onion and chicken broth and bring to a medium simmer
Purée the mixture with a hand blender until smooth
Add the ginger and cream and bring back to a medium simmer and simmer for an addition 3-4 minutes
Add the pepper to taste
Garnish with a dab of sour cream and some chopped chives or some sliced green onions
