    CHICKEN, PROSCIUTTO and SAGE SOUP

    Serves: 4


    INGREDIENTS

    1 Tbsp. (15 mL) olive oil
    2 Tbsp. (30 mL) shallots, chopped
    1 tsp. (5 mL) fresh garlic minced
    1 Tbsp. (15 mL) fresh sage, chopped
    2 Tbsp. (30 mL) prosciutto ham, diced
    1 lb. (450 g) boneless, skinless chicken breast, cut into 1/2-inch cubes
    2 cups (500 mL) chicken broth
    1 tsp. (5 mL) lemon zest
    Salt and fresh-ground pepper to taste
    Chopped fresh parsley for garnish

    METHOD

    Heat a medium-sized non-stick saucepan to medium-high. Add the olive oil, shallots, garlic, sage and prosciutto. Sauté for 3 to 5 minutes or until the shallots turn transparent. Add the chicken to the pan and continue to sauté until the chicken is lightly browned.
    Add the chicken broth and bring to a boil. Reduce the heat and simmer for five minutes or until the chicken is cooked through.
    Sprinkle soup with lemon zest and parsley, correct seasoning and serve
