Carrots and Sweet Potato Soup

3 large sweet potatoes
8 medium sized carrots
1 large sweet onion
7 cups of chicken stock
1/3 cup of sweet sherry
1 cup of orange juice
1 tablespoon of butter
Dash of nutmeg
Recipe
Coarsely chop sweet potatoes and carrots.
Slice onion and brown slightly in butter, deglaze the pan with the sherry. Add the juice, broth, potatoes and carrots. Cook until vegetables are very tender. Place soup and nutmeg in a blender and puree.
