Cheese Soup
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup butter
1/4 cup flour
1 quart chicken broth
1 quart milk
1 cup Velveeta cheese
Salt and pepper to taste
Sauté carrots, celery, and onion in butter. Add cornstarch and flour
to make a smooth mixture, then add a little broth. Add this into the
milk, cheese, and remainder of broth in another pot. Cook on low heat
1 1/2 to 2 hours. Serve with croutons. Recipe
