Chilli Soup

List of Ingredients
2 cans red kidney beans
1 large onion
4 cloves garlic, mashed
4 slices of Pancetta
1/2 cup chopped parsley
1/2 cup diced red pepper
1/2 cup diced yellow pepper
1/2 cup sweet corn (not creamed)
Salt and pepper (to taste)
1/3 cup apple cider vinegar
1 tbsp. Mexican Chili Powder
1 tbsp. Ground Cumin
Dash of Cayenne pepper
1/4 cup olive oil
4-5 cups water.
1 avocado, sliced
Recipe
In a large pot add the oil, pancetta, peppers, onions & garlic and saute till transluscent. Add the spices, salt, pepper, beans, and mix for a minute or so. Add 5 cups of water (or less, if you like it thicker), the vinegar, parsley and the corn. Bring to a boil, then simmer for about 1/2 hour covered until desired consistency. Remove any scum from top of soup. Ten minutes before serving, add sliced avocado pieces.
