1/2 pound country bacon (thick sl ice)
1 large onion, chopped
6 stalks celery, sliced
2 cloves garlic, minced
2 cups water (divided)
3 cups cubed new potatoes with skin
2 tablespoons cooking sherry
1-1/2 cups milk
4 tablespoons all purpose flour
1/8 teaspoon black pepper
Recipe
1. Cook the bacon in a frying pan until crispy. 2. Put the bacon (including 2 tablespoons drippings),1 1/2 cups water, milk, onion, garlic and celeryin a large pot. 3. Bring to a boil and then turn down and allow tosimmer uncovered for 35 minutes. 4. Mix sherry, 1/2 cup of water and flour in a bowl.When thoroughly mixed, stir into chowder. 5. Add salt and pepper and continue to simmer for15 minutes.
