    1 head of celery, chopped
    1 onion, chopped
    25g/1oz butter
    25g/1oz flour
    1/2tsp salt
    1/4tsp black pepper
    1/4tsp nutmeg
    900ml/1 1/2 pints hot chicken stock
    150ml/1/4 pint milk
    2tbs soured cream
    2 bacon rashers, grilled and finely chopped (2 slices Canadian bacon)

    Combine the celery, onion and butter in a large bowl suitable for the microwave and cook on FULL (100%) for 10
    minutes, stirring occasionally.
    Stir in the flour, salt, pepper and nutmeg, then add the stock. Partially cover and cook on FULL (100%) for 10
    minutes. Puree in a blender or food processor, or press through a sieve.
    Stir in the milk and cream. Adjust the seasoning, if necessary, and cook on FULL (100%) for 2 minutes. Serve the
    soup garnished with the chopped bacon.
