    List of Ingredients




    10 medium size potatoes
    2 pounds sweet Italian sausage
    1 tbsp. minced garlic
    3 strips of bacon
    fresh spinach to taste, stemmed and washed
    2 tbsp. of good olive oil
    1 large can of evaporated milk
    1 pint of half and half
    chopped onion to taste
    salt and pepper to taste

    Preparation:
    Wash potatoes and slice thin leaving the peel on. Place in a large pot and cover with water. Bring to a boil on stove over medium heat, cook until potatoes are soft, don't drain. In a large skillet add olive oil, garlic and chopped onion and sauté until onions are clear, (translucent) add to pot with potatoes. Fry bacon until crisp, let cool to the touch then crumble in to pot. Fry sausage until it is done in the same pan, (strain the fat saving 2 tbsp. for the spinach), slice the sausage and add it to the pot.
    Sauté cleaned and stemmed spinach with 2 tablespoons of reserved fat on low heat covered for about 3 minutes. Drain the fat from spinach and add it to pot. Add evaporated milk and half and half, and cook for about 20 minutes. Season with salt and pepper to taste.

    Serve with bread sticks and top soup with parmesan cheese.

    Serves 10
