    Lemon Chicken Soup

    2 cups diced chicken
    1/2 cups chicken broth
    1 cup finely chopped celery, carrot, onion
    1/4 cup dry white wine
    Juice of 1 lemon
    1 tablespoon Italian herb seasoning
    1 tablespoon minced garlic
    Pinch of lemon zest
    8 ounces orzo or other small pasta uncooked
    1 cup of chopped spinach
    Grated Parmesan cheese

    Recipe



    Place raw vegetables in blender or food processor and process until finely chopped.

    In large soup pot, place broth, pureed vegetables, wine, lemon juice, Italian seasoning, garlic, and lemon zest. Heat to boiling; reduce heat to low and simmer 10 minutes. Stir in chicken and pasta; heat to boiling and cook 5 minutes. Stir in spinach and cook 2 to 3 minutes or until pasta is tender. Serve in soup plates; top with grated cheese.
