Mai's Stuffed Pepper Soup

2 lbs. chopped sirloin (place sirloin steak in food processor and process a few seconds at a time (pulse) until meat is chopped into sm. bite-size pieces or you may use the Italian method of chopping the steak with 2 lg. sharp knives)
1 T butter
1 qt. water
1 (28-oz. can tomatoes, undrained
1 (29-oz. can tomato sauce
1 regular can beef stock
1 cube Knorr vegetarian vegetable bouillon for added flavor
2 T. packed brown sugar
2 tap. salt
1 tsp. black pepper
2 c. green bell peppers, cut into 1/2" cubes
2 c cooked long-grain rice (organic rice purchased at a health food store works best. Wash the organic rice 3 times in cold water before cooking)
Recipe
In Dutch oven, brown chopped beef in butter. Add water and cook for 25 - 30 minutes or until beef is tender. Add remaining ingredients and bring to boil. Reduce heat, cover and simmer for 15 -20 minutes or until peppers are tender. Add cooked rice and turn heat off. Makes about 16 servings.
