Potato and Thyme Soup

6 medium Yukon Gold potatoes peeled and cut in small dice
1 small Yellow Onion cut in small dice
5 sprigs fresh thyme
2 Bay leaves
1 cup heavy cream
4 strips bacon cut in small dice
1 quart low sodium chicken stock
Salt and Pepper to taste
Sour cream and Shredded Cheddar Cheese for Garnish
In Medium sauce pan over medium low heat render bacon until crisp. Remove to paper towel and keep for garnish. Remove all but two table spoons of bacon drippings. Sweat onion over medium heat until soft. Add potatoes, chicken stock, thyme and bay leaf, Simmer until potatoes are soft. Mash potatoes until smooth. Season with salt and pepper to taste. Add heavy cream and do not let soup boil again. Re-adjust seasoning. Serve with crisp bacon, shredded cheese and sour cream as garnish.
