    Salsa Soup

    2 tablespoons vegetable oil
    1 pound sweet Italian sausage
    1 teaspoon pepper seasoning
    salt and pepper to taste
    1 cup chopped onions
    1 cup sliced celery
    1 cup diced carrots
    3 cloves garlic, minced
    1 quart low sodium chicken broth
    1 (16-ounce) jar Salsa (hot or mild)
    2 small zucchini, quartered, then sliced crosswise 1/2-inch thick

    Recipe



    Heat oil in saucepan over medium heat. Add Italian sausage and cook, stirring occasionally, until until done. Using a slotted spoon, transfer to a bowl.

    In same pan, sauté onion, celery, carrots and garlic 3-4 minutes. Add chicken broth and salsa; bring to a boil. Simmer 30 minutes, stirring occasionally. Stir in zucchini and sausage and simmer 8-10 minutes or until zucchini is tender.

    Makes 4-6 servings
