1 tablespoon olive oil
1 red onion, diced
2 medium red peppers, seeded and diced
1 clove garlic, minced
1 cup canned yellow or white corn kernels
1 cup canned cut green beans
1/2 cup canned baby peas (optional)
1/2 cup fat-free, reduced-sodium chicken broth
Salt and pepper
Recipe
Heat olive oil in a nonstick skillet over medium heat.
Add the onion, peppers and garlic, cook until
softened, stirring occasionally, for 3 to 5 minutes.
Do not brown. Add the corn, green beans, and peas, if
using, to the pan and stir well. Add the chicken
broth. Cook until the vegetables are heated through.
Season with salt and pepper.
