Tortellini Soup
1 Tbsp olive oil
5 garlic cloves, thinly sliced
1/2 cup dry red wine
6 cups chicken broth
2 9 oz. pkgs cheese tortellini
1 1/4 cups chopped tomato
1 6 oz. bag baby spinach
Recipe
Heat olive oil in a large pot over medium high heat. Add the garlic; cook for 30 seconds, stirring constantly.
Stir in wine and broth. Bring to a boil; cook for 2 minutes.
Add tortellini; cook for 6 minutes. Stir in tomato and spinach; cook for 2 minutes, or until the spinach wilts.
Add the butter, and cook until butter melts.
