Vegetable Beef Barley Soup
1 1/2 lbs. beef stew meat
1 small bell pepper, chopped
1 small onion, chopped
1 cup fresh or frozen green bean, cut into 1" pieces
1 cup fresh or frozen whole kernel corn
1 cup uncooked barley
1 1/2 cups water
1 teaspoon salt
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme leaves
1/4 tsps black pepper
2 cans beef broth (14 oz. each)
2 cans diced tomatoes & roasted garlic (14.5 oz. each)
1 can tomato sauce
Recipe
1. Add above ingredients to a 4 to 5 quart slow cooker
2. Mix all ingredients.
3. Cover and cook on low heat setting for 8 to 9 hours
Makes 13 cups of soup.
