List of Ingredients
1 pound bacon, diced
1 large onion, chopped
1 green pepper, chopped
2 carrots, chopped
4 chicken breast, diced
4 quarts warm water
2 bay leaves
1/4 cup granulated chicken bouillon
5 pounds red potatoes, cubed
S&P
parsley
2 Tablsp chopped garlic
1 cup milk
1 cup butter
instant mashed potatoes
Recipe
In large skillet, fry bacon til crisp.
Remove and saute the onions, pepper, carrots and chicken. Saute til chicken is no longer pink. Transfer all into large stock pot. Add warm water, bay, bouillon, red potatoes, S&P, parsley and garlic. Cook til potatoes are tender. In saucepan, melt butter and add milk til warm; pour into soup. Mash some of the potatoes and add instant potatoes to thicken to taste.
Serve warm.
