Watermelon Gazpacho

Ingredients
* 3 cups diced tomatoes
* 3 cups diced watermelon
* 1/2 of a small red bell pepper
* 1/2 teaspoon chopped red onion
* 1 cup peeled chopped cucumber
* pinch of minced garlic
* 1 cup extra virgin olive oil (and a little extra for garnish)
* 1/4 cup water
* pinch of chili flake
* salt to taste
* pinch of black pepper
* 1 avocado
-combine all in a blender except avocado and EVO
-blend well for at least a couple of minutes
-turn the blender on slow and while it is still running, slowly add the EVO (kind of like you would with a vinaigrette)
-chill
-when ready, whisk the gazpacho to mix everything together and pour into serving bowls
-add small diced avocado, and garnish with EVO, black pepper and chili flake
** makes two bowls of soup
