White Bean Soup with Roasted Garlic & Chili Oil
2 cans Cannellini Beans
4 cups Chicken Stock
2 TBL. Sage Leaves (chopped)
4 Garlic Cloves
4 oz Olive Oil
Pinch Chili Flakes
Pinch Salt and Pepper
4 TBL Chopped Parsley
Recipe
1. Chop 2 of the cloves of garlic, the other 2 cloves slice thinly.
2. Heat 2 TBL of oil, sauté the chopped garlic. Add 1 can of drained beans; add chicken stock and sage, season with salt and pepper. Cook for 10 minutes, blend the beans and broth. Add second can of beans cook for 15 minutes check for consistency and seasoning.
3. Before Serving Heat up 2 tablespoons of olive oil in a small pan add the thin slices of garlic and a pinch of chili flakes. Cook the garlic till nice and brown. Pour the soup into the bowl. Before serving the soup add a ¼ teaspoon of the chili oil with garlic drop in the center of your dished up soup, sprinkle with chopped parsley.
