Banana Pepper Butter from David
36 hot yellow banana peppers -- seeded
1 quart white vinegar
3 pounds brown sugar
1 quart prepared yellow mustard
1 cup all-purpose flour
Recipe
Wearing disposable rubber gloves, wash, seed and chop yellow banana
peppers. Puree with some of the vinegar in a food processor or blender.
Place in a large stockpot. Add the mustard and heat to boiling. Remove
from heat. Mix 1 cup flour with remaining vinegar to make a thin paste.
Mix with ingredients in stockpot. Return to heat and boil hard for 3
minutes. Process in a water bath canner for 10 minutes. Yields 8 pints.
