    Homemade Mayonaise EDIT

    Homemade Mayonaise
    Ingredients:

    * 1 egg at room temperature
    * 1/2 tsp salt
    * 1 cup extra virgin olive oil
    * 1 tsp white wine vinegar
    * 1 tsp Dijon mustard
    * 2 tsp fresh lemon juice

    Method:

    In a blender, combine egg, salt, and 1 tsp of the oil.

    Blend at the lowest speed for about 1 minute. With the blender still running, add remaining oil in a slow thin stream until it is thoroughly blended. In a small bowl, mix together mayonnaise with vinegar, mustard, and lemon juice. May be used immediately, or cover and refrigerate for up to 4 or 5 days.

    Makes about 1 1/2 cups

    Lemon Artichoke Sandwich Dressing:
    Ingredients:

    * 3/4 cups marinated artichokes
    * 1/2 of 1 lemon, juiced
    * 1/2 tsp minced garlic
    * 1/4 cup freshly grated Parmesan cheese
    * 2 tbsp sour cream
    * Sea salt
    * Fresh cracked pepper

    Method:

    In a food processor purée artichokes, garlic, and lemon juice until smooth.

    Add grated cheese, and sour cream. Blend until smooth.

    Season with salt and pepper to taste. Cover and refrigerate until ready to serve.

    Suggested Sandwich:

    Ciabatta bread, lightly toasted Thinly sliced deli Lemon Pepper Chicken Sliced Feta cheese Sliced Tomatoes Lettuce Lemon Artichoke Sandwich Dressing

    Roasted Tomato and Bleu Cheese Sandwich Dressing:
    Ingredients:

    * 4 oz cream cheese, at room temperature
    * 3.5 oz prepared Roasted Tomato and Bleu Cheese Pesto, (M.C. Rossi) or any other desired pesto
    * 2 tbsp sour cream
    * Juice of 1/2 -1 lemon

    Method:

    n a food processor, blend together cream cheese and lemon juice.

    Add pesto and sour cream. Blend until smooth. Add additional lemon juice if desired. Cover and refrigerate until ready to use.

    Makes about 1 1/2 cups

    Suggested Sandwich:

    French style rolls Thinly sliced Deli Italian Seasoned Roast beef Provolone cheese Tomatoes Lettuce Roasted Tomato and Bleu Cheese Sandwich Dressing
