Recipe Introduction
NOTE: The USDA say's you shouldn't can this at home so,
I would suggest that you only make as much as can be used within
a reasonable time and I'd store it in the fridge.
List of Ingredients
Sandwich Spread
1 qt. finely chopped sweet pickles
3 red sweet red peppers or canned pimentos chopped fine
3 green sweet peppers chopped fine
1 cup vinegar
Cover peppers with vinegar and cook 10 minutes. Drain.
In double boiler prepare the following:
3 tablespoons flour
1/4 teaspoon cayenne pepper
1 teaspoon ground mustard
3/4 cup vinegar from sweet pickles
1 teaspoon salt
1 cup cream
3 well beaten eggs
4 tablespoons sugar
Recipe
Thoroughly mix flour and other dry ingredients. Add vinegar and mix
to smooth paste. Cook in double boiler until thickened. Pour cream in
gradually, stirring constantly. Pour hot mixture over beaten eggs and
mix well. Return to boiler. Cook 3 minutes. Add pickles and peppers
and let come to boiling point.
Pour into clean jars. Put on cap, screwing the band tight. Process in
water bath 10 minutes.
