    Half Time Grilled Chicken

    ingredients
    4 boneless, skinless chicken breast halves
    1-1/4 cup + 2 Tbsp. orange juice
    1/4 cup soy sauce
    1 1/2 Tbsp. rice vinegar
    1 Tbsp. grated fresh ginger root
    1 Tbsp. minced garlic
    2 Tsp. crushed red pepper

    instructions
    Butterfly chicken by slicing' each breast horizontally in half, cutting
    almost, but not completely through. Open to make 1 flat piece. Carefully
    place chicken in large plastic food storage bag and set aside. Combine
    orange juice, soy sauce, vinegar, ginger, garlic and crushed red pepper and
    pour over chicken. Press air out of the bag and close top securely. Turn bag
    over several times to coat the chicken well. Refrigerate for 30 minutes,
    turning the bag over once. Grill chicken. 5 to 6 minutes on each side, or
    until chicken is no longer pink in center. Serves 4
