Playoff Swordfish
4 swordfish steaks (6 oz. ea.)
1 Tbsp. olive oil
l recipe roasted pepper & basil salsa
Roasted pepper & basil salsa
3 red peppers
2 cloves garlic, chopped
10 basil leaves, torn
1 Tbsp. red wide vinegar
3 Tbsp. olive oil
salt & black pepper
Recipe
Brush steaks with olive oil on both sides. Grill over medium- hot coals
until just opaque, three minutes per side. Sprinkle with salt & pepper.
Spoon over salsa and serve hot. Serves 4.
Grill, peel & seed the peppers. Dice peppers and combine with garlic, basil,
vinegar and oil. Add salt & pepper to taste. Cover and let stand for 30
minutes at room temperature to allow flavors to blend.
