Strawberry heart jigglers
Makes 32 squares
1 cup freshly squeezed lemon juice, strained
1/2 cup sugar
4 packages unflavored gelatin
2 (12-ounce) cans lemon-lime soda
4 tablespoons grenadine
1 pint large ripe strawberries, stemmed and sliced lengthwise 1/8-inch thick
Recipe
In a mixing bowl, combine lemon juice and sugar, stirring until dissolved. Sprinkle gelatin over mixture and let stand 2-3 minutes.
In a small saucepan over high heat, bring soda to a boil. Add gelatin mixture, stirring until completely dissolved. Pour half the mixture into a bowl, other half into a separate bowl. Add 1 tablespoon grenadine to 1 bowl and 3 tablespoons grenadine to the other.
Pour about 3/4 cup of the mixture from each bowl into two separate 8-inch-square pans and place in refrigerator to gel, about 20 minutes. Set aside bowls with remaining mixtures at room temperature.
Cut strawberry slices into heart shapes using a 1-inch aspic cutter. Place hearts about an inch apart, across the thin layer of chilled gelatin, pressing lightly with your finger to embed them. Cover each with remaining gelatin mixtures and chill until completely set, about 3 hours. Cut into 2-inch squares and serve on a white platter, alternating squares by color in a checkerboard pattern.
Note: For variety, cut hearts from banana slices for some of the squares.
