Strawberry "Mocktail"

4-6 strawberries, halved
1 cup cubed ice
¨ö cup simple syrup
2 tsp. lemon juice
1-2 cups club soda
In a blender combine strawberries, ice, simple syrup and lemon; mix well. Fill sugar-rimed glass half-full with strawberry mixture and top with club soda. If you prefer, you can run the strawberry mixture through a strainer before pouring into the glass. Garnish with sliced strawberries or a single strawberry on the rim.
Cream-filled Strawberries

Whipped Cream Filling (ideas below)
1 pkg. strawberries, rinsed & dried
Mascarpone Filling:
¨ù cup mascarpone cheese
¨ö cup whipping cream
2 tsp. powdered sugar
Orange Cream Filling:
¨ø cup whipping cream
3 tsp. powdered sugar
1 tsp. vanilla
2 tsp. orange zest
Chocolate Hazelnut Filling:
¨ø cup whipping cream
¨ù cup hazelnut spread, heated
Assembly
Cut an "X" in strawberry, starting from the top to the base. Be sure to not cut through the strawberry. Place whipped cream mixture into a bag fitted with a piping tip of your choice. Start by filling the center of the strawberry, and then fill the sides of the berry starting from the base to the top. Berries must be kept in the fridge and should be consumed within 24 hours.
