Vegetarian grape leaves
1 cup rice (soaked)
1 bunch of parsley (chopped)
1 head of tomato (diced)
1 medium onion (chopped)
Juice of 1 lemon
¼ c. vegetable oil
½ tsp. salt
¼ tsp. black pepper
1 tbsp. mint
Mix ingredients. Strain juice and save for cooking.
Put one tsp. stuffing in each grape leave and roll.
Arrange rolled grape leaves in a pot. Cover with water. Bring to a gentle boil then reduce heat to lowest setting, and cook for about 1 ½ hrs.
Let cool completely before removing.
Yeilds about 6 dozens.
This recipe is vegan, vegetarian, and gluten free friendly.
