    1 (3 pounds) lean pork loin roast
    2 tablespoons Dijon mustard
    1 teaspoon ground thyme
    Fresh ground pepper to taste

    Spread pork roast with thin coating of mustard. Sprinkle with thyme and pepper. Roast uncovered, at 375 degrees for 1 1/2 hours.
